Super Saucy Pork Chops



I can't remember where this recipe came from originally, so if anyone recognizes let me know so I can credit the creator of this yummy dish. We haven't had it in a while, we've been out of pork chops and they haven't been on sale. Finally this week they are on sale so I'm planning to have these soon.

2 pork chops (fat trimmed and bone removed)
14 oz can of peeled, crushed tomatoes
1/4 cup brown sugar
1 T vinegar
1 t garlic powder
1/4 cup chopped sweet onion
1 T molasses
1-2 cups cooked pasta (if you are going gluten-free use a gluten-free pasta here)

1. Pour tomatoes in blender and pulse to break up tomatoes. We like ours just a little chunky.

2. Combine all ingredients in a crock pot, except pork chops and pasta, and stir.

3. Place pork chops on top.

4. Cook for 6-8 hours on low.

5. Serve over pasta.

This makes enough for my husband and I to eat for dinner with enough leftover for the next days lunch.

    I was wondering how you found out you had Celiac? I was tested for it by a blood test and the result came back negative.
    Wonderful I thought but I still had a terrible rash and problems with my bowels. Later I was tested and found a mild allergy to wheat. I cut out wheat and gluten (I did that just because it seemed easier to know then it had no wheat.)
    The rash got a ton better and my bowels are so much better I can't put it in words. I did not know they it was connected. But now I am sorta at a loss. I am not sure where to go from here and not eating this is getting old fast.

  2. I was really lucky with my Celiac diagnosis. Since I have a family history I pretty much walked in and told the doctor what I had. They gave me the blood test and then an endoscopy which confirmed Celiac.

    There are people who have skin rashes caused by gluten intolerances or allergies. And the GI symptoms are almost universal.

    Eating gluten-free is really hard in the beginning, but once you get the hang of it, it's not bad. I try to cook as much as possible by just eliminating or modifying ingredients that contain gluten. Pasta is a really easy one to switch. I haven't found gluten free tortillas that I like so we just serve fajitas over rice now. I'm just now (a little over 2 years after diagnosis) getting into the gluten-free baking.

    What foods are you missing the most? Where are you struggling with eating gluten-free? If you let me know, I will try to post what I can or point you to a website or blog that has what you are looking for.

    Hang in there, it really does get better.

  4. I think it is the hardest when the family has something like cookies. Or when I am sick and can't cook and hubby has to pick up something.
    Tomorrow I want to try a brownie mix that is Gluten free I picked it up a while back and I hope they are good.

    Right now I am dealing with insurance to see what they will cover in terms of the genetic and metabolic testing. There are few things in life I hate more than dealing with insurance.... Once we figure that out then he will get blood drawn and we will have to collect a urine sample. We have the opthamologist appointment next month and the geneticist in late October. That was their next available. Yep, October. We go back to the neurologist in 2 months so we can discuss the results of all this testing and decide the next step. Meanwhile I'm waiting for the place that will do his speech, gross motor and fine motor evaluations to call back to set an appointment. We know he needs therapy (and has gotten some already) for the feeding issues. Oh yes, and Tuesday we go to the cardiologist to see why he has decided to start turning blue (toenails and fingernails) in the meantime.

    Brownies are pretty easy to make gluten-free and they taste pretty much like regular brownies. Betty Crocker has a chocolate chip cookie mix that's pretty good too. You can find it where they have all the cake mixes in the grocery store. It says gluten-free in big letters. Make a bunch and store them in the freezer so you can pull one out when you need a little treat.

    For when you are sick, you could pick up some of the noodle dishes you find in the Asian food section. A lot of them have rice noodles and I just keep a couple in the cupboard for emergencies. (Just avoid the soy sauce.) For fast food I have gone on the internet and searched for allergen free menus for chain fast food places. I know I can have chili and a Frosty at Wendy's, for example. Knowing a couple of these will save you if DH has to go out and get you something or if you get caught on the road. Hope that helps. Let me know how the brownies turn out.
